Tony’s love of local, seasonal, sustainable food led him to found Eat Sussex Magazine. His knowledge of local producers and suppliers has been developed through helping source ingredients for his partner’s pubs in Brighton.
Tony describes himself as “an enthusiastic, rather than a talented cook” and admits that having a chef in the family is a pretty massive cheat. His top tip is to cook too much and freeze the surplus for a lazy day. He enjoys simple, unfussy, home cooking using fresh, seasonal ingredients from the farms, independent shops and markets around Sussex.
