Cherryade - Sophie Conran

Serves 4

    300g cherries
    1 tsp vanilla essence
    3 tbsp caster sugar
    4 tbsp water
    Juice of a lime

Method

Wash the cherries and stone them using either a cherry stoner or a small sharp knife. Place the cherries, vanilla essence, sugar and water into a saucepan. Bring to the boil and simmer for a few minutes, making sure the sugar dissolves and the cherries are soft. Whizz the cherry mixture in a blender and then pour through a sieve, pushing it through with a wooden spoon. Stir in the lime juice and then put in fridge until ready to serve. Before serving the cherryade, put 3 tablespoons of purée into a glass with ice and fill with fizzy water.
