Lemon and Ginger Tea

From The Complete Superfoods Cookbook by Michael van Straten

Serves 2-3

    2.5cm or 1in fresh ginger root, peeled and grated
    600ml or 20 fl oz boiling water
    1 lemon

Method

Cover the grated ginger with the boiling water.

Add the juice of half the lemon and leave to cool.

Put in the fridge to chill.

Strain and serve with slices taken from the other lemon half.
