This Beef and Orange Casserole from The Mortimer Chocolate Company is a rich warming casserole that fills the kitchen with a mouth-watering aroma. Don't be frightened by the addition of chocolate - it simply adds to the depth of flavour.
Serves 4
2 tbsp vegetable oil
450g diced beef
1 large onion, chopped
2 carrots, sliced
1 bottle of beer (33cl)
1 level tbsp Mortimer Chocolate Powder
Grated rind and juice of 1 orange
Salt and pepper
1/4 tsp grated nutmeg
1/2 tsp powdered allspice
Method
Preheat oven to 130C.
Heat 1 tbsp of the oil in a frying pan over a high heat. add the beef in batches and brown.
In a flameproof casserole add the other tbsp of oil and soften the onion over a medium heat. Add the meat to the pan with the carrots, beer, chocolate powder, orange, spices and seasoning. Bring it up to simmering point, put the lid on the casserole and place in the oven for 2 1/2 hours, until the meat is tender.
You could bake some jacket potatoes while the oven's on and serve with a green vegetable.
