Cooking times are so dependent on an accurate oven. For safety’s sake, plan the timing so that, if all goes right, the bird will be ready one hour before the meal. This will give you leeway if necessary. When the bird is cooked, open the oven door to cool the oven, then put the turkey on a serving dish and put it back in the oven to keep warm.
