Scrambled Eggs with Green Chilli and Crispy Serrano Ham

From the RSPCA Freedom Food Celebrity Recipe Collection by James Martin. Naturally you will get the best-tasting results from Freedom Food free-range eggs. This would make a great brunch dish.

Serves 2

    6 medium Freedom Food labelled eggs
    ½ green chilli
    6 slices of Serrano ham
    25g/1oz butter
    100ml/3 fl oz double cream
    salt and freshly ground black pepper

Method

Break the eggs into a bowl and beat together with the seasoning.

Remove the seeds from the half chilli, dice very small and leave to one side.

Place the Serrano ham onto a grill tray and grill until crisp.

Meanwhile, heat up the frying pan. Add the butter to the pan, heat slightly then pour the eggs in. Quickly mix the eggs with a whisk and when half cooked, add the cream, whisking all the time. Just as the eggs are beginning to set, remove from the heat and serve immediately with the Serrano ham.

RECIPE TIPS

Spice up scrambled eggs with a little chilli and serve with marvellously crispy, salty ham.

FoodLovers tip: The Serrano Ham will continue to crisp as it cools, so remove it from the grill when ready, and place on a cool plate till ready to serve.
