From the RSPCA Freedom Food Celebrity Recipe Collection by Orlando Murrin, this recipe makes cheese biscuits perfect for serving with drinks. Be sure to use a good tasty cheddar.
Makes approx 36 biscuits
115g/4oz plain flour
½ tsp salt
¼ tsp cayenne pepper
115g/4oz Freedom Food strong cheddar, grated
115g/4oz butter, softened
½ tsp Worcestershire sauce
25g/1oz puffed rice
Sift flour, salt and cayenne to mix.
Method
Mix Cheddar, butter, and Worcestershire sauce thoroughly and blend into the flour mixture.
Add the puffed rice and mix in lightly. Chill the dough in the fridge for half an hour.
Heat oven to 200C/400F/Gas 6. Form the dough into 2½ cm/1” balls and put on baking paper on a baking sheet. Flatten with a fork, making a criss-cross pattern on the top. Bake for 12-15 minutes until lightly browned.
