Welcome to Focus On... Pancake Day, or Shrove Tuesday as it's properly known. In Food Events we've got Pancake Day Races across the country - we've picked a few of our favourites here. To make your own pancakes, we've got a dead simple recipe from Gilchesters Organics and a traditional treat from Henrietta.
Or why not Henrietta's recipe for A Quire of Paper... As she says "These rich and very thin pancakes are piled one on top of the other and eaten cut into slices, rather like a cake. The recipe comes from The Art of Cookery Made Plain and Easy by Hannah Glasse written in 1747. They are made exactly as modern pancakes."
'Take a Pint of Cream, six Eggs, three spoonfuls of fine Flour, three of Sack (sherry), one of Orange-flower water, a little Sugar, and half a Nutmeg, grated, half a pound of Melted Butter, almost cold; mingle all well together, and butter the Pan for the first Pancake; let them run as thin as possible: when just coloured they are enough: And so do with all the fine Pancakes.'

There are Pancake Day Events on around the country - here's a few suggestions.
Olney Pancake Race
Market Place, Olney, Buckinghamshire MK46 4EF
The 415 yard dash from the market place in Olney to the church starts at 11.55am precisely on Shrove Tuesday. To enter, you must be a woman, a resident of Olney and be dressed as a housewife in skirt, apron and head covering, tossing a pancake in a pan. The record to beat is last year's 69 seconds - can you do it?

Are you the best crepe maker in town - and are your recipes creative enough? Enter the competition and find out - the prize is the Crepe-Making Crown and free crepes for a year.
Great Spitalfields Pancake Race
Start 12.30pm
Spitalfields, London
Get yourself a team of four, frying pans and some measure of athletic ability and enter the Great Spitalfields Pancake Race. There are prizes for the best-dressed team as well as an engraved frying pan for the winning team.
