Brookland White chickens are free range - in fact they have very little choice in the matter as their feeders and drinkers are outside and their sheds are designed as shelter only. Unusually the birds have access to outdoors 24 hours a day. This means that on a warm summer’s night, they’ll often sleep outside but night or day, they’ll supplement their feed with insects, grubs and grasses.

Kept in groups of no more than 400, they’re fed home-milled feed made up from wheat, peas, barley, oats and triticale grown on the farm. Slaughtered on farm at about 12 weeks, the chickens are wet plucked, air blasted to cool and dry the skin then hung in the chiller for at least 4 days. As well as whole birds, they will cut to order and also supply a range of chicken burgers and chicken sausages. At Christmas, they also produce a capon-style bird, that can weight up to 15lb oven ready.

Henrieta says

These are plump chickens with good crisp, great flavoured skin - you can tell they have been hung to mature by their flavour.
