Beef is hung for a minimum of 28 days and there’s usually a choice of rare breed pork from Middle White, Large Black to Saddleback. These lend themselves to different cuts – they butcher a good range of cuts from loins to whole heads for a brawn – and different cooking methods. They also make various sausages – pepper & thyme and sage & wine are particularly popular and dry-cure for bacon and pancetta with a Parma-style ham following on shortly.
The deli counter stocks own-made pies and a good range of British cheeses and, as you might expect from a ‘regular’ village shop, there’s a selection of teas, jams, bread and most every other essential, everyday groceries including brillo pads.
