Donald Russell was founded by Scottish farmer William Donald and Master Butcher John Stone, who co-wrote the industry text, ‘The Meat Buyer’s Guide’. Originally suppliers of well-butchered beef and lamb, they also sell pork, pork products and salmon from Freedom Food approved farms as well as poultry and other fish and game. Products are sourced locally where possible, but they do look further afield for a full range of products - all are fully traceable.

Donald Russell beef is traditionally reared and hung for 21 days. As well as the prime cuts, they also sell cheaper cuts like shin of beef and oxtail. The lamb is sourced from farms that vary through the year depending on the lambing season which is earlier in the warmer, southern UK counties.


Pork is from traditional and rare breeds. Sausages are made exclusively by their supplier Broadoak with 70% minimum meat content using natural casings and simple seasonings. Venison comes in two native Scottish varieties, rich flavoursome Red deer or the mild, smooth textured meat of Roe deer.

Cod, haddock, halibut, monkfish and sea bass are all caught wild from Scottish waters and the salmon farmed in Scottish lochs.
