Dyke Head Farm on the Wallington Estate in Northumberland produces good lamb and beef. All the lamb is born on-farm, fed solely on their mothers' milk and once weaned, grass. After slaughter at the local abattoir, it is hung for at least a week at the farm shop.
The cattle lead equally stress-free lives. Allmost entirely grass-fed and kept to Freedom Food animal welfare standards, it is hung to give it a good length of flavour.
