Ess Foods was launched in 2004 by Rick Sheepshanks - and they’re doing very nicely, thank you. They make a range of dressings, mustards, mayonnaise, chutneys, relishes, preserves, jams and marmalades under the Suffolk Mud, Stokes and Staverton Ewe brands.
Like all FoodLovers Approved businesses, everything is made in small batches with only the best ingredients - raw cane sugar rather than liquid glucose – and, of course, no additives. Lemon curd is a testament to the meticulous attention to detail.
It is made in small batches in kettles by hand and includes free-range eggs from Freedom Food approved farms, as well as sugar, lemon juice, butter, lemon oil and a touch of fruit pectin. The recipe was developed after in-depth research into traditional curd recipes, but the end product itself only came to fruition, as it were, after being trialled 12 times to get the right consistency and tartness. Only when Rick himself has approved the product does it go on sale. And if Rick likes it, you can be sure you will.
