Foraging Course

Fat Hen is a wild food experience with a difference.  If you love food and are interested in foraging but can’t bear the thought of eating survival food all weekend then Fat Hen is for you!

Our philosophy is that wild food doesn’t have to be survival food.  If you want to learn how to forage safely with a professional ecologist and forager and to find out how chefs use wild ingredients to create restaurant style food come on a Fat Hen Gourmet Weekend.

Fat Hen runs Gourmet Weekends, Taster Wild Food Days, Wild Food Guided Walks, Team Building Days, Hen Weekends and Private Events. 

Matt, the executive chef of The Clifton Lido, Bristol and his wife Claire, a chef and wine expert will show you how to turn the wild food found in West Cornwall into creative innovative dishes influenced by culinary flavours that span the globe.

Fat Hen Gourmet Weekends involve foraging from the beaches, woodlands and hedgerows of West Cornwall; cooking with Matt and Claire in our farmhouse kitchen and feasting in rustic style in the comfort of the beautiful Goat Barn (a newly converted granite barn re-built using traditional materials).

We use local wild meats such as rabbit, pigeon and venison and fish & seafood freshly caught in local waters.

Over the weekend you will learn to identify and eat at least 30 wild ingredients from laver seaweed to rock samphire and how to incorporate these ingredients to make dishes such as:

Alexanders risotto

Wild Greens Salsa Verde

Hogweed seed biscotti

Pigeon breast with mugwort & black pepper

Hallumi cheese with wilted wild greens on toasted pitta

Carragheen seaweed pannacotta

The common misconception about foraged food is that it is survival grub. But an afternoon in the kitchen with Matt and Claire soon dispels this myth’.
