Food Safari specialises in gourmet Field to Fork days that go one or two steps beyond a traditional cookery school.
We run events and workshops that take you behind the scenes of some of East Anglia's best food and drink producers in many cases combining farm walks and tours with hands-on butchery workshops and cookery demonstrations. Each day culminates in a gourmet feast, usually at The Anchor, Walberswick, featuring the fruits of your day whether that's game, wild food or seafood.
On a Food Safari you will meet dedicated and inspiring producers like Pinney's of Orford (Oysters and smoked fish), the Wild Meat Company (game), and Blythburgh Free Range Pork. You will hear the fascinating stories behind them, see how they are produced, and even get your hands dirtcy skinning a rabbit, making sausages or cheese.
Events include:
Wild Meat Day - learn how to prepare pheasant, venison, rabbit or other game, enjoy a game cookery demonstration and game feast.
Wild Food Day – we'll explore the countryside, coast and a domestic garden to learn to find common wild food like nettles or more exotic samphire and autumnal mushrooms.
Free Range Pork Day - farm tour, butchery demo and sausage-making and pork feast.
Catch & Cook – off-shore fishing, learn to prepare the fish with a chef and enjoy a seafood feast.
Cheese Day – spend the day with artisan cheesemakers, Suffolk Farmhouse Cheese. Meet the pedigree guernsey cattle and learn how to make a cheese to.
Seafood Day - river fishing trip in search of lobster, crab and other seafood, followed by a tour of Pinney's of Orford's traditional smokehouse and oysterbeds.
Beer Safari - an East Anglian journey from barley to beer. Depending on the season we'll visit a hop farm, barley farm and a brewery or two to learn about the essential ingredients for great beer.
Children's Food Safari - the chance for children (5-12) to find out more about where food comes from, vist an organic farm and learn to make sausages and burgers for lunch.
The Anchor at Walberswick is home to Food Safari butchery and cookery workshops. Mark and Sophie Dorber, formerly of The White Horse, Parsons Green, have created a gastronomic destination. Sophie leads the cookery workshops and provides sumptuous feasts to wrap up the day profiling great local produce and wild foods. Mark Dorber, shares his expansive knowledge of beer and wine and provides hand-picked selections to match each course.

If you are planning a special birthday party or a a client or team event Food Safari can create something entirely different and memorable! Recent private events have included a birthday party where friends learned how to prepare partridge and rabbit before a five course lunch with beer and wine selected to match each course. We've even had a group of insurance executives fishing for lobsters, learning how to open oysters and trying their hand at carving a whole smoked salmon.
