The Lighthouse Bakery is an award winning, independent artisan bakery founded in London in 2000. The term ‘artisan’ simply means that we use few automated processes, relying instead on traditional methods. We hand-mould each individual loaf and use long fermentation to develop the full flavour of the dough. We do not use any artificial enhancers or chemical improvers – these are taboo. Salt, sugar and fat are used judiciously. Artisan methods produce bread that is full of complex flavour and texture, and that retains the nutritional values of the high-quality ingredients used.
After seven years of owning and running a successful retail bakery in Battersea, South London co-owners Rachel Duffield and Elizabeth Weisberg decided to move the Lighthouse Bakery to East Sussex to set up the bakery school and small wholesale bakery. Offering expertise and experience, they want to inspire a new generation of bakers.
Set amidst the rolling hills of the High Weald and overlooking Bodiam Castle the Lighthouse Bakery School offers a popular range of one day bread making courses which provide the complete beginner and seasoned baker alike with the unique opportunity of working with a variety of doughs in a professional bakery setting. What is produced – with the skill and confidence gained from each course – is fantastic looking, great-tasting bread, of which participants are justly proud.
The wholesale bakery offers a range of traditional English white wheat and wholemeal breads, which is complimented by a large range of fabulous speciality breads. We are interested in quality rather than quantity, making and baking bread in small batches. We also like to work closely with retailers to provide detailed information about our products, their ingredients, and how they are best used with other foods.
