Karen and Will Jones of Ossams Hill Farm in the Peak District are passionate about rare-breed beef and lamb. Not only are rare breeds more suited to hill life, but their slow maturing rate and natural diet means the flavour is incomparable.
The beef comes from Aberdeen Angus, Hereford and Beef Shorthorn, the lamb and mutton from the local hill breed, the Derbyshire Gritstone. You can see them grazing the scarily steep limestone dalesides which plunge down to the river Manifold.

As a judge for the National Trust Fine Farm Produce Awards, I found their lamb sweet and firm as good hill lamb should be.
